Sun-Dried Tomato Meat Loaf Recipe


This high in protein, low in carbs dinner is delicious!


Ingredients:

1 Cup Sun-Dried Tomatoes, in olive oil

1 large Onion, finely diced

1 1/2 lbs. Ground Sirloin


Preheat the oven to 350 degrees F.


Directions:

Drain the sun-dried tomatoes from the olive oil into a large non-stick pan, and finely dice them.


Add the pan over medium heat and add 1 cup of the diced onions.  Stir occasionally for 10 minutes, until the onion is golden.


Combine the onions and tomatoes to the ground sirloin in a large bowl, will all the pan juices.  Add 1 tsp. of salt and pepper.


In another bowl, combine a 1/4 of a cup of cold water and 3 slightly crushed ice cubes.  Then add the water combination to the sirloin mixture and mix thoroughly.


Mold into a loaf, and place on a baking sheet with a rim.  Bake in the oven for 35 to 40 minutes.  Let it cool for 5 minutes before serving.
