Shrimp and Asparagus Stir-Fry Recipe


This is a delicious, healthy, diet appropriate dish.


Ingredients:

1 Tbsp. Peanut Oil

1 tsp. Garlic, chopped

1 tsp. chopped ginger

1 lb. Asparagus, trimmed and cut into 1 1/2" lengths

1 Cup Shiitake Mushrooms, thinly sliced

1 lb. Shrimp, peeled & deveined

Freshly Ground Black Pepper

1/4 Cup Low-sodium Soy Sauce


Directions:

In a wok, heat the peanut oil over medium-high heat.  Then add the ginger and garlic and stir-fry for 30 minutes.


Increase the heat to high, and add the asparagus, then the mushrooms, and then the shrimp.  Season with pepper.


Add the soy sauce, and cook for 2 minutes.  Serve with rice or noodles.
