Shrimp Tacos Recipe


With a corn relish, these shrimp tacos are amazing!


Ingredients:

1 1/2 Tbsp. Red Onion, minced

1 Tbsp. Honey

1/2 tsp. Garlic, finely chopped

1 tsp. Fresh Cilantro, chopped

1/8 tsp. Paprika

1/2 Cup Freshly Squeezed Limejuice

1/2 tsp. Cajun Seasoning

1/4 Cup Water

Salt for seasoning

16 Shrimp, shelled, deveined, tails removed

4 Low-fat Whole-Wheat Tortillas

1 Green Onion, chopped

1 tsp. Fresh Cilantro, chopped


Corn Relish

1 Cup Frozen Corn, thawed

Cooking Spray

1 Green Onion, chopped

6 Roma Tomatoes, diced

Lemon Pepper Seasoning


Directions:

In a bowl, add the red onion, honey, garlic, cilantro, paprika, limejuice, and Cajun seasoning.  Add a 1/4 of a cup of water, and season with salt.  Add the shrimp to the bowl and let marinate for an hour in the refrigerator.


Line a skillet with cooking spray, and heat over medium-high heat.  Stir-fry the corn until it’s golden brown.  Pour the corn into a bowl, and add the onion, tomatoes, and lemon pepper seasoning.


Remove the shrimp from the marinade, but keep the marinade.  Spray the skillet again with cooking spray and heat to high.  Cook a few shrimp at a time, until the just start to turn opaque, and then remove.  Pour the marinade in the pan, and let it come to a boil, boil for 2 minutes, and turn to a lower heat until it starts to thicken.


Put 4 shrimp in each tortilla, top with the corn relish, and the marinade sauce.  Sprinkle with green onion and cilantro.
