Shrimp Avocado Salad Recipe


Here’s a new and different salad to try.


Ingredients:

2 Red Grapefruits, sectioned

3/4 lb. large Shrimp, cooked, peeled, and deveined

1 Tbsp. fresh Grapefruit Juice

1 tsp. Sugar

1/2 tsp. Kosher Salt

1/8 tsp. Ground White Pepper

2 tsp. Extra-Virgin Olive Oil

4 Cups Romaine Lettuce Hearts, slivered

1 Tbsp. Fresh Chives, minced

1 Avocado, peeled and cubed


Directions:

In a medium bowl, combine the grapefruit sections and shrimp.  Whisk together the grapefruit juice, sugar, salt, pepper, and oil in a small bowl.


In a large bowl, add the lettuce, and drizzle on the dressing, tossing to coat.


Separate to 4 plates or bowls, and add the shrimp mixture, chives, and avocado.
