Red Curry Chicken and Rice Recipe


Here’s a delicious dinner that is totally good for you.


Ingredients:

1 lb. Chicken, minced

1 Tbsp. Red Curry Paste

2 Tbsp. Cilantro,
chopped

1 Cup Cooked Jasmine Rice

1 tsp. Sugar

Cucumber and Carrot, cut into wide thin strips

Bean Sprouts

Mint Leaves

Rice Vinegar

2 tsp. Fish Sauce

2 tsp. Lemon Juice

1 Tbsp. Sugar


Directions:

Combine the chicken; curry paste, cilantro and half of the rice in a food processor.  When it’s combined, stir in the rest of the rice.


With wet hands, make 16 patties, and let them back on a cookie sheet at 425 degrees F for 10 minutes.  Flip the patties over after 5 minutes.


Serve over a salad with the cucumber, carrots, bean sprouts, and mint leaves.  The dressing can be made by pouring the rice vinegar, fish sauce, lemon juice, and sugar in a resealable jar.  Shake well before pouring on the salad.
