Penne with Salmon Recipe
This penne with salmon, has a delicious roasted vegetable side dish.
Ingredients:
12 oz. Penne
2 lbs. Leeks
1 Red Bell Pepper, cut into strips
2 Tbsp. Lemon Juice
1/4 Cup Chicken Broth
1 Tbsp. Olive Oil
1/4 tsp. Freshly Ground Black Pepper
2 tsp. Dried Thyme, crushed
1 Yellow Summer Squash, halved and cut into 1/4” slices
1/4 Cup Kalamata Olives, pitted
1/2 lb. Salmon Fillet, skinned
Preheat the oven to 400 degrees F.
Directions:
Prepare the pasta according to the instructions on the packaging.
Cut the leeks lengthwise into quarters 2” in length. Rinse the leeks, and put the leeks and pepper in a 9x13” baking dish. Add the lemon juice, broth, 2 tsp. of the olive oil, black pepper, and thyme. Cover the dish with foil and bake for 15 minutes.
Add the olives, salmon, and squash to the dish, and drizzle on the remaining tsp. of olive oil. Cover and bake for 30 minutes.
Put the penne in a large serving bowl, break the salmon into pieces and add it to the penne with the vegetables.
