Parmesan Zucchini Strips Recipe


Sometimes eating vegetables can be a chore, but these just taste so damn good that eating vegetables can be a treat.


Ingredients:

1/4 Cup Parmesan Cheese, grated

1/3 Cup seasoned Breadcrumbs

4 small Zucchini, quartered lengthwise

1 Egg, beaten (or egg substitute)


Preheat the oven to 450 degrees F.


Directions:

Combine the cheese and breadcrumbs in a bowl.  Dunk the zucchini strips into the egg, and then into the cheese mixture.


Coat a baking sheet in cooking spray and place the strips on the baking sheet.


Bake for 20 to 25 minutes, until they are golden brown and tender.
