Grilled Mint Marinade Flank Steak Recipe


This is a great high protein meal.


Ingredients:

2 tsp. Garlic, minced

1 Tbsp. Grated Navel Orange Rind

1/2 Cup Fresh Orange Juice, strained

2 Tbsp. White Wine Vinegar

1/4 tsp. Cayenne Pepper

1 tsp. Dijon Mustard

1 Tbsp. Fresh Mint, minced

1 1/2 lb. Flank Steak, trimmed

2 Large Navel Oranges, peeled & sliced thin

8 Sprigs Mint


Directions:

Combine the orange juice, vinegar, garlic, orange rind, mustard, mint, and pepper in a shallow baking dish.  Add the steak to the marinade, refrigerate for 4 hours, turning the steak twice.


Remove the steak, scraping off any bits from the marinade back into the dish.  Transfer the marinade to a saucepan and bring it to a boil.


Heat the grill to hot heat, and lightly grease the grill with cooking spray.  Place the steak on the grill, letting it sear for 1 and a half minutes on each side.


Brush a little of the marinade on the steak and continue cooking, covering the grill for 4 minutes, brushing the marinade on frequently.  Make sure it’s done to your liking, and take it off the grill.  Don’t cut for 7 minutes. 


Add the orange slices around the outside of the serving platter, and slice the steak diagonally across the grain.  Garnish with the sprigs of mint.
