Fish Tacos Recipe


With a tasty mango salsa these fish tacos with spicy black beans is fantastic!


Ingredients:

Mango Salsa

1 Mango, chopped

Juice of 1 Lime, Zest of 1/2 Lime

1/4 Onion (red preferred)

1/2 Jalapeno, seeded and diced


Topping

1/2 Cup Plain Low-fat Yogurt

1/2 tsp. Chili Powder


Seasoning

2-3 lbs. Tilapia

Salt and Pepper

Juice from 1/2 Lime


Spicy Black Beans

1 (14 oz.) can Black Beans, rinsed and drained

1/2 Onion, diced

2-4 Garlic Cloves, diced

1 tsp. Olive Oil

1 tsp. Cumin

1 tsp. Chili Powder

Tortillas

1 Cup Cabbage, shredded (purple)


Directions:

Mix all of the mango salsa ingredients in a bowl and refrigerate.


Stir in the chili powder with the yogurt, and refrigerate.


Season the tilapia with salt and pepper, and squeeze the limejuice over the fish.  Broil or grill the fish over medium heat for 6 to 8 minutes.


Sauté the garlic and onions in olive oil, and then add the black beans.  Add the chili powder and cumin and heat over low heat for 8 minutes.


Heat the tortillas in the microwave until warm.  Add about 2 to 3 oz. of fish to the middle of the taco.  Top with 2 Tbsp. of salsa, 2 Tbsp. of beans, sprinkle the cabbage on top, and 1 Tbsp. of the topping.
