Eggplant Parmesan Recipe


Here’s a great vegetarian substitute to everyone’s favorite Italian dinner.


Ingredients:

2 Eggplants

1 jar Marinara Sauce

1 lb. Mozzarella, shredded

1 Cup Parmesan Cheese


Preheat the oven to 350 degrees F.


Directions:

To prepare the eggplant, wash and dry it, and discard both ends.  Slice into 1/2” pieces and steam for 7 to 8 minutes.


Spray a 13x9” pan with cooking spray, and line the pan with the marinara sauce.  Lay a single layer of eggplant strips on the sauce, and sprinkle the mozzarella and parmesan cheese on top.  Spread the sauce over the top, and repeat until all the eggplant is in the pan.  Sprinkle the rest of the cheese on top.


Bake until the cheese is melted and bubbly, about 30 to 45 minutes.


Serve with pasta.
