Chicken Tacos Recipe


These are fantastic chicken tacos, diet or otherwise.


Ingredients:

1 lb. Chicken Breasts, skinless & boneless (cut into 1” strips)

1 Tbsp. Olive Oil

Salt and Pepper to taste

1 Lime

8 medium Flour Tortillas

Salsa Fresca, optional

Guacamole, optional

Tomatoes, diced, optional

Lettuce, shredded, optional


Directions:

Brush the olive oil over the chicken strips and sprinkle on salt and pepper.


On high heat, add the chicken to a skillet lightly coated with oil.  Cook the chicken for 4 minutes per side.  Then let the chicken rest for 5 minutes.


Slice the lime in half, pierce the lime with a fork to release the juice over the chicken.  Cut the chicken into bite-sized pieces.


Warm the tortillas, by dipping them in water first and place them in a dry pan over low heat.  Assemble the tacos at the table with salsa, guacamole, tomatoes, and lettuce.
