Chicken Cobb Salad Recipe


If you’ve got to eat something healthy, it should have some flavor!


Ingredients:

2 Chicken Breasts, boneless & skinless

2 tsp. Extra-Virgin Olive Oil

2 Tbsp. Extra-Virgin Olive Oil

1 tsp. Poultry Seasoning

Salt and Freshly Ground Black Pepper

4 large Eggs, just the whites

3 Hearts Romaine Lettuce

2 Lemons, juiced

2 ripe Avocados, diced

2 Vine Ripe Tomatoes, seeded and diced

1 Red Onion, chopped

2 Cups White Cheddar or Monterey Jack


Preheat the grill to medium high heat.


Directions:

Coat the chicken with the 2 tsp. of oil, salt, pepper, and poultry seasoning.  Grill for 6 to 7 minutes for each side.


Cover the eggs in a small pot with cold water, and place over high heat, letting the water come to a boil.  Once at a boil, cover the pot and turn off the heat and let simmer for 10 minutes.  Then cool the eggs under cold running water.  Peel and chop the eggs.


Combine the rest of the salad ingredients in a bowl, tossing to mix.  Separate to 2 plates or bowls, and top with the egg and chicken.
