Black Bean Dip Recipe


Here’s a tasty appetizer that won’t ruin your diet.


Ingredients:

2 large Garlic Cloves, minced

1/2 large Green Bell Pepper, chopped

1/2 medium Onion, chopped

1 tsp. Vegetable Oil

2 (15 oz.) cans Black Beans, rinsed and drained well

3 Tbsp. fresh Limejuice

1/4 Cup Coriander Sprigs, washed well and spun dry

1 tsp. Ground Coriander Seeds

1 tsp. Ground Cumin, or to taste

1/2 tsp. Cayenne, or to taste

1/4 tsp. Salt, or to taste

Freshly Ground Black Pepper to taste

2 Tbsp. Water

Baked Tortilla Chips or Crudités


Directions:

Cook the bell pepper, onion, and garlic and a large non-stick pan over low heat, stirring until the onion turns translucent.  Then remove the pan from the heat.


Blend the beans, coriander sprigs, limejuice, spices, and water in a food processor until it’s smooth.  You can add 2 Tbsp. of water if needed.  Add the pepper mixture and blend again until smooth.  Refrigerate for 3 hours before serving.
