Apple Streusel Coffeecake Recipe


Here is a great dessert that is about as healthy as a dessert can be.


Ingredients:

Streusel

1 1/4 Cups Light-Brown Sugar, packed

3/4 Cup Flour

2 tsp. Cinnamon

1 stick Butter, cold & diced

1 Cup Walnuts & Pecans, coarsely chopped


Coffeecake

3 1/4 Cups Flour

3/4 tsp. Baking Soda

1 1/2 tsp. Baking Powder

1 1/2 sticks Unsalted Butter, at room temperature

1 1/4 Cups Granulated Sugar

3 large Eggs

16 oz. Low-Fat Sour Cream

2 tsp. Vanilla Extract

2 Golden Delicious Apples, diced


Glaze

Powdered Sugar

Water or Milk

Splash of Apple Cider (optional)


Preheat the oven to 350 degrees F.


Directions:

Start by greasing and flouring a bundt pan.


To make the streusel, stir together the brown sugar, flour, cinnamon, and butter with a fork, until crumbly and the butter is incorporated.  Stir in the nuts.


For the cake, in a small bowl mix the flour, baking soda, baking powder.  Beat the butter and sugar in a mixer until it’s fluffy, usually 2 minutes.  Add the eggs, one at a time, then the sour cream and vanilla.


On low speed, add the flour mixture to the butter/sugar mixture, until it’s blended.


Add about 3 cups of the cake batter to the bundt pan, and then sprinkle on 1/2 a cup of streusel, a layer of apples, another 1/2 cup of streusel, and the remaining batter.  If there’s any streusel left, sprinkle on top.


Bake for 50 minutes, until a toothpick comes out clean.  Let it cool on a rack for 15 minutes, then remove the pan and let it completely cool.


The glaze is optional, combine the water and sugar, until it’s even, add a splash of the apple cider, and strain the mixture.  Pour over the cooled cake.  You can sift a small amount of powdered sugar on top.
